I love one pan wonders! I avoid grains, for the most part, and love veggie noodles. This one is a fun Southwestern twist on Tacos. If you have a spiralizer, you can make your own noodles. And many stores now carry zucchini and yellow squash noodles that are done-for-you. It’s a much healthier and tastier option. You can combine your own taco spices or buy a premade package and voila, dinner is ready!

One Pan, Gluten-Free, Taco Zoodle Surprise

Ingredients
  

  • 3  large zucchini spiralized, or 2 packages of done-for-you spiralized zucchini or yellow squash from the grocery store.
  • 1 lb organic ground beef or bison or turkey- go with higher fat content for added flavor (omit for Vegan option)
  • 1 tbsp  avocado oil

Instructions
 

  • First, prepare your veggies. Spiralize your zucchini and dice your peppers, onion, garlic, cilantro and avocado. Set aside your cilantro and avocado for garnish.
  • In a skillet, heat the avocado oil over medium high heat. Add the peppers, onions and garlic and sauté for about 3 minutes, until they are fragrant and the onion is translucent. Remove from the pan and set aside.
  • Add the ground beef or bison to the pan along with the spices (cumin, paprika, chili powder, salt, pepper and red pepper flakes). Cook until the meat has browned, breaking apart with a spatula. Remove from pan and set aside.
  • Add the zucchini noodles to the pan and sauté for 3-5 minutes, until the noodles have softened slightly. You may add a tiny bit more oil if needed.
  • Add the meat, veggies and diced tomatoes to the pan. Stir for 3 minutes, until everything is combined.
  • Serve warm and top with fresh cilantro and avocado.

Seasoning Cheat Tip: Trader Joes has a premade Taco spice mix that is great! Omit spices below if you have a premade one.
