Looking for a quick Spring or Summer breakfast to please everyone? This Super Antioxidant Chia Pudding is it. It’s simple and nutritious. You can make it the night before for a hassle-free morning, however it’s so quick it isn’t necessary. If you want to boost your antioxidants even more, you can open up 4 capsules of Paleovalley Essential C Complex capsules, which are food based and KGM approved. And you can also add a flavorless collagen to give your hair, skin, nails, and joints some love. You’ll need a blender or food processor for this one.

This recipe serves 2.

Ingredients

2 kiwi fruits, peeled and sliced to add for topping

6 fresh organic strawberries, sliced, for the topping and or a few raspberries and blackberries

2 cups frozen strawberries or any frozen fruit could work such as mango, or other berries.

3 cups coconut (I prefer full fat from a can, without any additives) or almond milk

¾ cup chia seeds

Cacao nibs, raw honey, or other toppings (optional)

Optional: 4 Paleovalley Essential C Complex capsules

Optional: 2 scoops Whole Body Collagen (no flavor)

Instructions

  1. Stir the chia seeds into 2 cups of full fat or other coconut milk or almond milk, until thoroughly combined. Let them soak for at least 10 minutes (you can soak them overnight as well). They will get gelatinous.
  2. Add the last cup of alternative milk and the frozen strawberries to the blender. If you’re using optional Essential C capsules, open them and dump the powder in, and blend well. If you’re adding collagen, also do this now. Blend on high until thick and creamy.
  3. Take two cups or bowls, I prefer parfait ice cream glasses. Divide the strawberry mixture into the bottom of two cups or bowls, and then divide your chia pudding and add on top. Or put your chi pudding in first and top with the strawberry mixture. It doesn’t really matter, whatever pleases you. If you want it to look more fancy, you can do 3 layers: a bottom of blended frozen fruit, a middle of chia pudding, and a top of a different blended frozen fruit, then topped with berries.
  4. Top with sliced kiwi and fresh strawberries or other berries, as well as cacao nibs or raw honey.

Serve immediately or save it over night in the fridge and serve the next morning.
