Instructions
Instructions for Squash
- Prepare the Squash: Grate the butternut squash and squeeze out excess moisture using a clean towel or paper towel. I like to use my grating attachment on my food processor.
- Mix Ingredients: In a bowl, combine grated squash, ground flaxseed, coconut flour, eggs (or ground chia or whole soaked chia seeds- jut cover the seeds with water and they will get gelatinous), sage, garlic powder, nutmeg, salt, and pepper.
- Form Patties: Shape the mixture into small fritter patties.
- Fry: Heat coconut oil in a skillet over medium heat. Fry each fritter for about 3-4 minutes per side, until golden and crispy.
- Serve: Enjoy hot, perhaps with Lemon Tahini Sauce, or a drizzle of coconut yogurt or a side of avocado.
Instructions for Lemon-Tahini Sauce
- Whisk: In a small bowl, whisk together tahini, lemon juice, garlic, olive oil, and water. Adjust the water to reach your desired consistency.
- Season: Add salt and pepper to taste.
- Serve: Drizzle generously over the warm fritters or serve on the side for dipping.
