Are you looking for a gluten-free alternative to traditional fritters? Ditch the nightshades- potatoes, and go for the squash! These fritters are crispy on the outside and tender on the inside, with the warm, savory flavor of butternut squash and sage making them a great addition to any meal. Try them with my favorite Lemon Tahini Sauce!

Butternut Squash & Sage Fritters with Lemon-Tahini Sauce

Ingredients
  

For the Buttnernut Squash

  • 2 cups grated organic butternut squash - take seeds out, but no need to peel
  • 1/4 cup ground flaxseed for binding
  • 1 Tbsp psyllium husks - optional, great additional fiber and binds it together if you don’t use eggs
  • 2 tbsp coconut flour or buckwheat flour
  • 2 eggs or 2 Tbsp ground chia seed, or soaked whole chia seeds-will add a little crunch, for vegan version
  • 2 tbsp fresh sage chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp nutmeg
  • Sea salt and pepper to taste
  • 2-3 tbsp coconut oil, or for frying, or avocado oil

Lemon-Tahini Sauce

  • 1/4 cup tahini sesame paste
  • 2 tbsp fresh lemon juice
  • 2 tsp coconut aminios
  • 1 clove garlic minced
  • 1-2 tbsp water - to thin to thin
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions for Squash

  • Prepare the Squash: Grate the butternut squash and squeeze out excess moisture using a clean towel or paper towel. I like to use my grating attachment on my food processor.
  • Mix Ingredients: In a bowl, combine grated squash, ground flaxseed, coconut flour, eggs (or ground chia or whole soaked chia seeds- jut cover the seeds with water and they will get gelatinous), sage, garlic powder, nutmeg, salt, and pepper.
  • Form Patties: Shape the mixture into small fritter patties.
  • Fry: Heat coconut oil in a skillet over medium heat. Fry each fritter for about 3-4 minutes per side, until golden and crispy.
  • Serve: Enjoy hot, perhaps with Lemon Tahini Sauce, or a drizzle of coconut yogurt or a side of avocado.

Instructions for Lemon-Tahini Sauce

  • Whisk: In a small bowl, whisk together tahini, lemon juice, garlic, olive oil, and water. Adjust the water to reach your desired consistency.
  • Season: Add salt and pepper to taste.
  • Serve: Drizzle generously over the warm fritters or serve on the side for dipping.
