Summer dips with fresh veggies, homemade dehydrated chia/flax crackers, or gluten-free tapioca pita bread can really hit the spot when you’re relaxing by the pool, having a potluck, or preparing an after-school snack. This hummus is delicious and gorgeous with the added nutrition of carrots. There are lots of options listed below to dress it up or down and play with various flavors. Ingredients:

1 cup chopped carrots
3 garlic cloves, peeled
3 tablespoons olive oil, divided
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 tablespoons lemon juice
2 tablespoons tahini
1 tablespoon spring or filtered water
1 teaspoon hot pepper sauce, such as Tabasco
1/4 teaspoon sea salt
1/4 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1/4 cup sunflower seeds
1 tsp Smoked paprika- half mixed in and half sprinkled on top for garnish
Assorted fresh vegetables and gluten-free pita wedges

Instructions

    1. Preheat oven to 400°.
    2. Place carrots and garlic in a rimmed baking sheet. Drizzle with 2 tablespoons oil; toss to coat. Roast until carrots are soft, 15-20 minutes. Cool on a wire rack.
    3. Transfer carrot mixture to a food processor. Add garbanzo beans, lemon juice, tahini, water, hot sauce, salt and spices. While processing, add remaining 1 tablespoon oil. Process until desired consistency.
    4. Transfer to a serving dish. If desired, drizzle with additional oil and hot sauce. Top with sunflower seeds. Serve warm or chilled with vegetables, chia/flax seed crackers, and gluten-free pita wedges.

Options: After preparing the hummus, you could also consider stirring in minced fresh parsley or thyme.

What other toppings can you put on carrot hummus?

  • Toasted pumpkin seeds or pepitas would be delicious
  • Chopped, toasted walnuts would lend a bit of richness.
  • Pine nuts make a lovely topping as well.

How long will carrot hummus last?

The carrot hummus will stay fresh for 5 to 7 days in an airtight container in the fridge, though it’s unlikely to stick around that long.
