Ingredients

  • 2 salmon fillets, about 5 oz each

  • 3 Tbsp ground flax

  • 2 tsp dried basil

  • 2 tsp dried oregano

  • 2 tsp dried rosemary

  • 2 clove garlic, minced

  • Zest of 1 lemon plus lemon cut into wedges

  • 1 Tbsp avocado oil

  • Sea salt and pepper to taste

 

Optional: (not gut repair friendly for the first 2 months)

  • ¼ cup macadamia nuts or almonds, or sunflower seeds- ground up in small chunks

 

Instructions

1. Preheat oven to 375 degrees.

2. Combine the ground flax seeds, optional ground nuts, herbs, garlic, lemon zest, and oil in a bowl and make the topping, then season with salt and pepper.

3. Place the salmon in a glass pyrex baking dish.

4. Spread the flax seed mixture over the salmon.

5. Bake in the oven until salmon is flakey and crust is golden brown.  Don’t over cook.

6. Serve with lemon wedges and a salad or over a bed of spinach.
