These crispy fries have a spicy Moroccan flare. They have more crunch than sweet potato fries and hit the spot when you want a healthy alternative French fry. Carrots are full of antioxidants such as Beta Carotene, which supports healthy vision and combats signs of aging. Have some fun and use tri colored carrots (yellow, orange, and purple).

Ingredients

Spicy Carrot Fries:

  • 2 lbs organic carrots (tri color are fun to use but not necessary), cut lengthwise into thin sticks
  • 2 Tbsp coconut or avocado oil
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp cayenne
  • ½ tsp powdered ginger
  • 1 tsp sea salt
  • Dash of black pepper

Keto Collagen Dip:

  • ½ cup vegan mayo or regular mayo
  • 1 scoop collagen (I like Whole Body Collagen.  Select a vegan collagen if you are vegan.)
  • 1 Tbsp organic ketchup (low sugar)
  • 1Tbsp horseradish
  • 1 tsp mustard
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • ¼ tsp sea salt

Instructions

Spicy Carrot Fries

  1. Preheat oven to 425 degrees F.
  2. Wash carrots. Slice each carrot down the center, then slice each part in half again and again until you have thin French-fry-like sticks.
  3. Add sliced carrots to a large bowl and toss with herbs, salt, and oil.
  4. On a baking sheet, spread sticks evenly and bake for 20-25 minutes or until crispy.
  5. While carrots are cooking prep the dipping sauce.

Dipping Sauce

  1. In a large bowl combine collagen, mayo, ketchup, horseradish, mustard, paprika, oregano, cayenne, pepper, and sea salt and whisk to combine thoroughly.
  2. Place the dip in a serving bowl.
  3. Serve with warm fries.
