First, prepare your veggies. Spiralize your zucchini and dice your peppers, onion, garlic, cilantro and avocado. Set aside your cilantro and avocado for garnish.
In a skillet, heat the avocado oil over medium high heat. Add the peppers, onions and garlic and sauté for about 3 minutes, until they are fragrant and the onion is translucent. Remove from the pan and set aside.
Add the ground beef or bison to the pan along with the spices (cumin, paprika, chili powder, salt, pepper and red pepper flakes). Cook until the meat has browned, breaking apart with a spatula. Remove from pan and set aside.
Add the zucchini noodles to the pan and sauté for 3-5 minutes, until the noodles have softened slightly. You may add a tiny bit more oil if needed.
Add the meat, veggies and diced tomatoes to the pan. Stir for 3 minutes, until everything is combined.
Serve warm and top with fresh cilantro and avocado.
