Paleo, Keto, and Vegan (option)

Inflammation is sooo common. Thyroid disorders, headaches, PMS, achy joints, allergies, and bloating are all signs of inflammation. We can use food as medicine and help decrease inflammation. It’s also important to address any inflammatory lifestyle habits. But food is a great way to begin, so let’s get started with this delicious and easy-to-make treat!

Are you looking for a healthy, anti-inflammatory treat? Here is a simple and delicious option! You can make it vegan by substituting the egg for 3 Tbsp soaked chia seeds or ground chia seeds. You can add organic collagen for radiant skin, hair, nails, and strong muscles. You can also consider adding organic raisins or dried sulfur-free cranberries.

Prep Time: 10 minutes
Total Time: 20-25 minutes
Serves: 10-12 cookies

Ingredients

  • 1 cup almond butter, creamy or chunky depending on your preference for more crunch
  • 1 cup bocha sweet (preferred, get it on line at Bochasweet.com, it’s the best healthy sugar alternative I’ve found!) or coconut sugar
  • 1 tsp pure organic vanilla extract
  • 1 egg or keep it vegan by using 3 Tbsp soaked chia seeds or ground chia seeds
  • 1 Tbsp turmeric powder
  • 1 Tbsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp baking soda
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup shredded coconut
  • ½ cup crushed pecans

Instructions

  1. Preheat oven to 350ºF. Line a baking sheet with parchment paper or silicon sheet
  2. Combine almond butter and bochasweet or coconut sugar in a large bowl.
  3. In a small bowl beat egg and add vanilla, stirring well. Add turmeric, cinnamon, ginger, nutmeg, baking soda, salt, and black pepper and combine well. Add to the almond butter.
  4. Scoop a tablespoon of dough onto the parchment paper and flatten with a spoon. Repeat until you have 10-12 cookies.
  5. Bake for 10-12 minutes, or until the tops turn a rich golden brown.

Let cool and serve.

Buen Provecho!
