Keto, Paleo, and Vegan Friendly
This soup is so simple and scrumptious. I give you two different options for preparing below. It is a hit for potlucks or as a side to a salad or main course. If you can get your kids past the beautiful green color, they will gobble it up. Everyone raves about how delicious this one is. Enjoy!
Ingredients
- 1 head / 300g broccoli broken or cut into florets; stem chopped (don’t throw it away)
- 2 ½ cups or 600 ml chicken stock/bone broth or a vegetal broth for a vegan option
- 3 spring onions scallions or 1 small onion, chopped
- 30 g / 1/3 cup pistachios, plus a handful for garnish
- 1 tsp cooking oil like avocado or coconut or ghee
- 1 garlic clove, chopped
- sea salt and pepper
- Coconut keifer or yogurt as a substitute for crème fraiche
Process
Option 1: Very Fast
- In a pan, fry the onion/spring onions and chopped garlic in oil or ghee over a low heat until tender and sweet, but not browned – approximately 7 minutes. You may keep the lid on and uncover to stir occasionally.
- Add all ingredients to an Instant Pot, put on “Soup” setting. When done allow steam to release.
- Add all ingredients to a food processor or blender (Vitamix works well) and blend until smooth. You may also use an Immersion hand blender.
- Season to taste with salt and pepper as desired.
- Decorate with a swirl of coconut keifer or yogurt as a substitute for creme fraiche, a little broccoli floret, and some pistachios.
Option 2: Medium Fast
- Steam the broccoli (5 minutes). If you do not have a steamer, fill a pot with 1-2 cm of chicken broth and put the broccoli in once it boils. This way, the majority of the broccoli will be steamed once the lid is on. Add the pistachios so they soften. (Set aside a couple of small florets for decorating if you wish)
- Add all ingredients to a food processor or blender (Vitamix works well) and blend until smooth. You may also use an Immersion hand blender.
- Season to taste with salt and pepper as desired.
- Decorate with a swirl of coconut keifer or yogurt as a substitute for creme fraiche, a little broccoli floret, and some pistachios.
